INGREDIENTS:

2 cups basil leaves(packed)(other herbs may be added for a twist)
3/4 to1 cup Extra virgin olive oil
1/2 to 1 cup Parmesan, Asiago, Pecorino or combination
1/2 cup nuts-pine nuts, walnuts or pecans
2-3 cloves fresh chopped garlic
2 tsp fresh lemon juice
1/4 tsp salt
few grind fresh ground black pepper to taste

PROCEDURE:

Place all ingredients into a food processor and grind to desired
consistency. Some like it smoother, some like it a bit coarser in texture.
I add lemon juice not only for flavor but also to hold the color as without
it can turn to the color of mud. I love to make large batches and freeze it
in small containers for the entire year.
