Makes 8 servings
1 head cauliflower, cut into florets
1 parsnip, chopped into chunks approximately the same size as the cauliflower florets
2 Tbsp. butter
¼ cup milk
Put water into the bottom of a large pot and place steamer basket in pot. Place cauliflower and parsnip in the steamer basket. Cover and steam until soft.
Put vegetables in a bowl and add butter and milk and mash with a potato masher or immersion blender. Season with salt and pepper to taste; serve immediately.
