Adapted from Joy of Cooking


3 kohlrabi, peeled, sliced into matchsticks

1 Tbsp salt

2 Tbsp minced garlic

1 Tbsp crushed red pepper flakes

1 Tbsp honey

1 Tbsp apple cider vinegar

1 1/2 Tbsp sunflower oil or sesame oil

1 1/2 Tbsp toasted sesame seeds, crushed


Mix salt and kohlrabi.  Let sit for 30-45 min.

Drain and gently squeeze out liquid

Mix all other ingredients in a large bowl and add kohlrabi, mix well.

Let marinate for an hour.

Serve at room temperature or chilled.  Will keep for several days in a refrigerator.
