Makes 2 servings
1 (12”) pizza crust
1 bunch of asparagus
Fresh thyme
3-4 stalks green garlic thinly sliced
Extra virgin olive oil
½ cup parmesan cheese
2 slices prosciutto or thinly sliced ham, coarsely chopped
2 eggs
Shave or slice asparagus into thin strips. Place in a bowl and drizzle with olive oil. Season with a pinch of salt and thyme and pepper to taste.
In a small skillet heat olive oil over medium heat and saute green garlic until soft.
Top pizza crust with parmesan cheese, asparagus, green garlic and prosciutto and bake according to crust recipe.
While pizza is cooking heat 2 tsp. olive oil over medium heat in a small pan. Fry the 2 eggs.
Remove pizza from oven and top with the eggs.
