Serves 4
Salad:
1 large kohlrabi, peeled, trimmed, and grated (can use purple or green)
¼ head cabbage, shredded (can use purple or green)
2-3 medium carrots, peeled and grated
½ red onion, thinly sliced
4 Tbsp. cilantro, chopped
¼ cup golden raisins
Dressing:
1/3 cup mayonnaise
¼ cup milk
2 Tbsp. sugar
1 Tbsp. apple cider vinegar
Combine all dressing ingredients in a medium bowl. Whisk until thoroughly mixed. Set aside.
Combine all salad ingredients in a large bowl. Mix until combined, adding dressing until all contents are thinly coated. Any extra dressing can be refrigerated for later use.
