Kohlrabi, Berry and Fennel salad
Dressing
2 Tbsp. minced garlic scapes
1 Tbsp. balsamic vinegar
1 Tbsp. greek yogurt
1 ½ tsp Dijon mustard
1 tsp soy sauce
1 tsp honey
¼ Extra Virgin Olive Oil
Salad
Kohlrabi, peeled and thinly sliced
Fennel bulb trimmed and thinly sliced
½ cup sliced, toasted almonds
1 cup strawberries, sliced
In a small bowl, whisk together the dressing ingredients
In a large bowl, toss the kohlrabi with fennel, toasted almonds and dressing. Add the strawberries and serve immediately.
